The story

Pomegranates from the gardens around Akre, pressed and cooked down slowly at home until thick and dark. Sweet and sour at once — for salads, stews, marinades and dressings.

In autumn, when the pomegranates split on the branch, the juice is simmered for hours until only the deep, tangy molasses is left.
